6-12 Cloves (depending on taste)
1 Bay Leaf
A pinch of Nutmeg, freshly grated if possible
700g White Bread
pinch of salt
25g of Butter
2tbs Cream (optional)
Cut the onion in half and stud with cloves, the amount you use depends on taste, I like to use quite a lot. Add the milk to the pan with the onion, peppercorns and bay leaf and grated nutmeg.
Bring almost to the boil and remove from the heat and let the flavours infuse.
Cut the crusts of the bread and cut into chunks. Before adding the bread to the pan, you can if you wish strain the milk to remove the peppercorns, onion and cloves or just add the bread as it is and mix.
Add the butter and cream if you are using and mix well.
The Bread sauce can be made up to 2 days in advance.
